Crispy Salmon Cakes

Ingredients

 

1 tablespoon vegetable oil, divided

1/4 cup finely chopped onion 

1/4 teaspoon fresh ground black pepper

3 fillets salmon, chopped into ½ cm cubes

1 large egg, lightly beaten

1/2 teaspoon lemon juice

2cm ginger, finely sliced (garnish) 

Preparation:


Heat 1 teaspoon oil in medium nonstick skillet over medium heat; add chopped onions and sauté until edges are brown and onions are tender. Remove from skillet.

 

Combine onion mixture with black pepper, salmon, egg and lemon juice in a medium bowl; divide into equal portions, shaping each into a 1/2-inch thick patty. Chill in the refrigerator for 20 minutes.

 

Heat 2 teaspoons oil in a large nonstick skillet over medium heat until hot; add patties and cook 5 minutes on each side or until lightly browned. Garnish with thinly sliced ginger, and serve with a mixture of soy sauce and sesame oil.
