Oriental Spiced Beef with Potatoes

Ingredients

500g lean beef sirloin, cut into 3cm chunks, washed and patted dry

250g potatoes, cut into 3cm chunks, same sizes as beef cubes

2 cups water

1/2 tsp scallions, finely chopped

1/4 tsp fresh ginger, finely chopped

1/4 tsp ground Sichuan peppercorn

1 star anise

1 cinnamon stick

2 bay leaves

5 tsp vegetable oil

1 tbsp soy sauce

2 tsp salt, or to taste

Preparation:

 

Place beef in a large pot of cold water, place lid on the pot and bring to a boil. Let boil for one minute. Remove and drain water from the beef cubes. Set aside.

 

Heat 1 cup of water in the same pot. Add scallions, ginger and spices (star anise, cinnamon stick, bay leaves, Sichuan peppercorn). Add the beef cubes and vegetable oil, bring to a boil. Reduce the heat to a slow simmer and cover for 1 hour. Replenish water if necessary. Cook until beef is very tender.

 

Separately, pan fry the potatoes till golden brown. Sprinkle with salt before removing potatoes from the pan. 

 

To serve, place potatoes on a serving dish, and top with a few cubes of spiced beef.
