Pan Fried Omelet with Chives

Ingredients

5 large free-range eggs 
½ cup fresh shiitake mushrooms
1/2 bunch Chinese chives, cut into 2cm strips 

2 tablespoon vegetable oil   
½ bunch green shallots, finely sliced 
A small pinch ground white pepper

Preparation:

Whisk the eggs in a bowl. Add the mushrooms and chives, mix and set aside.

 

Heat the oil in a hot non-stick pan. Pour in the beaten eggs and place over the heat for 10 seconds to cook the mixture on the base of the pan. Reduce the heat and turn the omelet to cook on the other side. Cook until set. Be careful to not overcook. Remove and slide into a serving bowl. Garnish with green shallots and pepper. Serve immediately.
