Pan Fried Salmon

Ingredients

 

4 center-cut salmon fillets (3cm thick), skin on or off

2 tablespoons extra virgin olive oil

Sea salt and freshly ground black pepper

Sprinkle of sesame seeds

Preparation:

Bring the salmon to room temperature for 5 minutes before cooking. Season lightly with salt and pepper.

 

Warm a large nonstick skillet with oil over medium-low heat. Raise the heat to medium-high then place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 5 minutes. Turn the fish over and cook until it feels firm to the touch and the skin is crisp, if desired. 

 

The skin can be served or removed easily with a knife or spoon. Transfer to individual serving plate, sprinkle with toasted sesame seeds and serve with lemon slices or wedges.
